Ingredients
- ½ pound bacon
- 1 pound pasta
- 4 tablespoons butter
- 1 shallot, finely diced
- 1 tablespoon fresh sage, finely chopped
- 4 tablespoons flour
- 2 ½ cups whole milk
- 1 can pumpkin puree
- 1 cup heavy cream
- ½ cup Smoky Cheddar Cheese Blend
- 8 ounces smoked gouda, shredded
Directions
- Preheat oven to 400ºF. Lay strips of bacon and a foil lined sheet pan. Bake until bacon reaches desired crispiness. Transfer cooked bacon to a paper towel line plate to drain. Once cooled, chop and set aside until serving.
- Meanwhile, prepare pasta according to package directions. Drain and set aside.
- In a large pan, melt the butter over medium-heat. Add in the shallots and sauté, stirring frequently, for 5 to 6 minutes, or until softened and nearly translucent. Stir in the sage and cook until fragrant.
- Sprinkle in the flour, and stirring constantly, cook for 1 minute. Slowly add in the milk, whisking constantly as you add. Whisk until smooth.
- Whisk in pumpkin puree and heavy cream.
- Bring mixture to a low simmer. Whisk in Smoky Cheddar Cheese Blend and smoked gouda until completely melted and combined.
- Remove pan from heat. Add cooked pasta and bacon and stir until combined. Season with salt and pepper to taste.
