Ranch Chicken Chili

Ingredients

1 ½ pounds boneless skinless chicken breasts

2 teaspoons Tex-Mex Seasoning

15.5 ounce can corn, drained

15.5 ounce can pinto beans, drained and rinsed

15.5 ounce can black beans, drained and rinsed
-
10 ounce can fire roasted tomatoes with green chilies
-
8 ounce block cream cheese
-
4 tablespoons Ranch Seasoning
-
3 cups chicken or vegetable stock
Directions
Add all ingredients to a slow cooker. Cover and cook for 4-6 hours or until chicken is very tender.
Shred chicken and stir soup until cream cheese is completely melted into the soup.
Serve with topping such as bacon, scallions, and/or cilantro.
