Tex-Mex Seasoning, it all comes together in one pot for an easy, comforting dinner with minimal cleanup. Perfect for busy weeknights when you want something cozy, filling, and simple

Ingredients

  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons Tex-Mex Seasoning
  • 8 ounce can tomato sauce
  • 14 ounce can fired roasted diced tomatoes
  • 2 cups beef broth
  • ¾ cup heavy cream
  • 9 ounces pasta (small shape such as elbows or shells)
  • 15 ounce can kidney beans, drained and rinsed
  • 8 ounces smoked gouda or cheddar, shredded

Directions

  1. Heat oil over medium-high in a large heavy-bottomed pot. Add onion and bell pepper. Sauté for about 3 minutes until softened. Stir in garlic and Tex-Mex Seasoning.
  2. Stir in tomato sauce, diced tomatoes, broth, and heavy cream. Bring to a boil.
  3. Add pasta and reduce heat to medium low. Simmer for 10 minutes or until pasta is cooked. Stir frequently to prevent the pasta from sticking to the bottom of the pot.
  4. Turn off heat. Stir in beans and cheese until the cheese has melted into the sauce.
  5. Garnish with fresh cilantro and scallions if desired.
