A bright and refreshing Mediterranean inspired salad made with tender shrimp, orzo pasta, crisp cucumbers, juicy tomatoes, olives and feta cheese, all tossed in a zesty herby vinaigrette. Perfect for a light lunch, easy dinner, or warm weather gathering.
Ingredients

1 pound orzo

2/3 cup olive oil
-
⅓ cup red wine vinegar

1 lemon, zested and juiced
-
1 tablespoon Dijon mustard

1 tablespoon Garden Dill Blend

¼ cup fresh herbs of your choice, chopped (parsley, dill, chives, basil, etc)

1 pound shrimp, peeled and deveined

2 tablespoons olive oil
-
1 tablespoon Garlic & Herb Blend
-
½ teaspoon salt
-
2 teaspoons paprika, or smoked paprika (optional)

2 cups halved cherry tomatoes
-
2 cups chopped cucumber
-
1 cup pitted Kalamata olives

8 ounces feta, cubed
Directions
Prepare orzo according to package directions.
Meanwhile, prepare the dressing in a large mixing bowl by whisking together 2/3 cup olive oil, red wine vinegar, lemon zest, lemon juice, Dijon mustard, Garden Dill Blend, and fresh herbs.
Drain the cooked orzo and add directly to the dressing in the bowl. Toss to coat in dressing and set aside to cool.
Pat shrimp dry.
Add shrimp to a mixing bowl and toss with remaining 2 tablespoons olive oil, Garlic & Herb Blend, salt, and paprika.
Heat a 12-inch nonstick skillet over medium-high heat. Add the shrimp and spread in a single layer. Cook for about 2 minutes on each side or until opaque and cooked through. Transfer to a plate to cool slightly.
Once orzo and shrimp are cooled, toss together along with tomatoes, cucumber, olives and feta. Serve room temperature or chilled.
