1 ¼ pounds ground beef

2 eggs, beaten

½ cup milk

½ cup grated Parmesan cheese

½ cup panko bread crumbs

2 tablespoons minced garlic
-
2 teaspoons Italian Herb Blend

½ teaspoon Cowboy Rub
-
¼ cup parsley, chopped

2 tablespoons oil
-
2 bell peppers, sliced
-
1 yellow onion, sliced
-
1 (28 ounce) can tomato sauce
-
½ tablespoon Italian Herb Blend

1 cup shredded mozzarella cheese
Directions
Preheat oven to 425ºF. Combine ground beef, eggs, milk, Parmesan, panko, garlic, 2 teaspoons Italian Herb Blend, Cowboy Rub, and parsley. Shape into golf bal-sized meatballs. (Makes about 20 meatballs).
Heat oil in a 12-inch cast iron skillet, or other oven safe skillet, over medium heat. Add meatballs and cook until browned on all sides. Remove from pan.
Add peppers and onion to the empty skillet. Sauté for 5 minutes.
Stir in tomato sauce and remaining ½ tablespoon Italian Herb Blend. Bring to a simmer.
Return meatballs to the skillet. Gently toss in sauce. Cover evenly with mozzarella cheese. Bake for about 15 minutes or until cheese is melted and meatballs are cooked through: 165ºF.
Serve over pasta or with crusty bread.
