Tender potatoes are tossed with crunchy dill pickles, a creamy, tangy dressing, and plenty of Garden Dill Blend for bright, herbaceous flavor in every bite. It's the perfect make ahead side for cookouts, picnics, or any summer meal.
Ingredients

3 pounds gold potatoes

⅓ cup olive oil

½ cup mayo
-
3 tablespoons pickle juice
-
2 teaspoons Dijon mustard

2 teaspoons Garden Dill Blend

¼ cup thinly sliced red onion

2 celery stalks, diced

2/3 cup diced pickles
Directions
Cut potatoes into 1-inch pieces and add to a saucepan. Cover with water and bring to a boil. Cook for about 10-15 minutes or until potatoes are fork tender. Drain.
Meanwhile, add olive oil, mayo, pickle juice, dijon mustard, and Garden Dill Blend to a large mixing bowl. Whisk until smooth. Add red onion, celery, and pickles.
Add drained potatoes and stir to combine all ingredients and coat in the dressing.
Season with salt and pepper to taste. Can be served warm or chilled.
Garnish with fresh herbs such as chives and dill if desired.
