Ingredients
- ⅓ cup mayo
- 1 ½ tablespoons Chipotle Lime Rub
- 2 (15.5 ounce) can black beans, drained and rinsed
- 1 tablespoon olive oil
- ½ red bell pepper, diced
- ½ yellow onion, diced
- 3 garlic cloves, minced
- ¾ cup panko bread crumbs
- 2 tablespoons Chipotle Lime Rub
- 2 eggs
- 6 hamburger buns
- toppings such as cheese, lettuce, tomato, red onion, avocado
Directions
- Mix together mayo and 1 1/2 tablespoons Chipotle Lime Rub. Refrigerate until serving.
- Preheat oven to 325ºF. Spread black beans on sheet pan and bake until dried, about 15 minutes.
- Meanwhile heat oil in a skillet over medium heat. Add bell pepper, onion, and garlic and sauté for about 5-7 minutes or until softened.
- Transfer sautéed vegetable to a food processor with beans, panko, 2 tablespoons Chipotle Lime Rub, and eggs. Pulse until mixture is combined and can be formed into patties. (If too wet, add more bread crumbs; if too dry add 1 tablespoon of water at a time).
- Shape ½ cup of mixture into patties. Bake patties on a parchment lined baking sheet @375ºF for about 15 minutes or sauté in a skillet over medium heat about about 8 minutes on each side.
- Serve on buns with chipotle mayo and your favorite toppings.
