This baked cabbage gratin takes humble cabbage to the next level. Seasoned with Heirloom Spice Co Montreal Rub for that perfect herbaceous flavor. Baked until golden and bubbling, it’s a comforting side dish that feels a little indulgent but totally worth it.
Ingredients

4 slices of bacon, diced

1 head green cabbage, cut into 6 wedges

1 ¼ cup heavy cream
-
4 teaspoons Dijon mustard

1 teaspoon Montreal Rub

2 teaspoons Montreal Rub

1 cup shredded Gruyere cheese
Directions
Preheat oven to 400ºF.
Add bacon to a large oven-safe skillet that is also big enough to fit all the cabbage wedges.
Cook bacon over medium heat until crisp. Transfer bacon to a paper-towel lined plate, leave the bacon grease in the skillet.
Increase heat to medium-high and add the cabbage wedges cut side down. Cook for about 5 minutes or until the cabbage is starting to brown. Flip cabbage. Turn off heat.
Whisk together heavy cream, Dijon mustard, and 1 teaspoon Montreal Rub. Pour around the cabbage in the skillet.
Season the wedges with the remaining 2 teaspoons Montreal Rub. Top the dish with the cooked bacon and shredded Gruyere.
Bake for about 20 minutes or until cabbage is tender, sauce is bubbling, and cheese is melted.
