Sweet Potato Skins

Ingredients

4 sweet potatoes

2 tablespoons butter, melted

2 tablespoons Espresso Rub

15.5 ounce can black beans, drained and rinsed

1 cup shredded cheddar cheese

2 avocados
-
½ cup sour cream
-
2 scallions, sliced
Directions
Preheat oven to 425°F. Microwave potatoes for 5-8 minutes or until fork tender. Allow to cool.
Once potatoes are cool enough to handle, cut in half lengthwise and remove flesh, leaving ¼-inch intact.
Place potato skins on a sheet pan. Mix together melted butter and Espresso Rub. Brush the insides of the potato skins with the mixture. Bake for 15 minutes or until skins are starting to crisp.
Remove potato skins from oven. Fill each with black beans and cheddar cheese. Return to oven and bake for about 10 minutes more until cheese is melted and starting to brown.
Mash avocado and season with salt and pepper to taste.
Serve potato skins with mashed avocado, sour cream, and scallions.
