Ingredients

3 acorn squash, halved and seeds removed

2 tablespoons melted butter

2 tablespoons maple syrup

2 tablespoons Espresso Rub
Directions
Preheat oven to 425°F. Place acorn squash cut side up on a sheet pan.
Mix together melted butter, maple syrup, and Espresso Rub. Brush the acorn squash flesh generously with the mixture.
Bake for 30-40 minutes until fork tender.
