Shrimp Tacos with Mango Salsa

Ingredients

2 tablespoons mayo

2 tablespoons sour cream

1 tablespoon water

1 tablespoon Tex-Mex Seasoning

1 mango, diced
-
1 red bell pepper, diced
-
½ small red onion, diced
-
1 teaspoon lime zest
-
1 lime, juiced
-
¼ cup cilantro
-
1 pound raw shrimp, peeled and deveined

1 tablespoon avocado oil
-
1 ½ tablespoons Tex-Mex Seasoning

8 (6-inch) tortillas

2 cups shredded green cabbage
Directions
Whisk together mayo, sour cream, water, and 1 tablespoon Tex-Mex Seasoning. Set aside.
Make mango salsa by combining diced mango, red bell pepper, red onion, lime zest, lime juice, and cilantro. Season with salt and pepper if desired.
Pat shrimp dry. Toss with avocados oil and remaining 1 ½ tablespoons Tex-Mex Seasoning.
Heat a 10-inch nonstick skillet over medium-high heat. Add shrimp and sauté until cooked through.
Warm tortillas if desired.
Fill tortillas with shredded cabbage and shrimp. Top with mango salsa and drizzle with prepared sauce from step 1.
