Maple Dijon Roasted Pork Tenderloin

Ingredients

1 tablespoon avocado oil
-
1 pound pork tenderloin, trimmed and silver skin removed

3 tablespoons dijon or whole grain mustard

3 tablespoons maple syrup

1 ½ tablespoons olive oil

2 tablespoons Espresso Rub
Directions
Preheat oven to 375ºF. Line a sheet pan with foil.
Heat avocado oil in a large skillet over medium high heat. Add the pork tenderloin and sear on all sides until browned. Transfer to the foil lined sheet pan.
Whisk together remaining ingredients. Reserve 3 tablespoons of the sauce in a separate bowl for serving with cooked pork.
Brush the pork with ½ of the remaining sauce. Add pork to oven and roast for 7 minutes.
Remove from oven and brush with the remaining ½ of sauce. Return to the oven and cook for about 5-7 minutes more, or until pork reaches 140ºF.
Rest for 5 minutes before slicing. Drizzle or serve with reserved sauce from step 3.
