Chicken Fajita Mac & Cheese

Ingredients

3 tablespoons avocado oil, divided

1 pound boneless skinless chicken breasts, cut into 1-inch pieces

1 yellow onion, diced

2 bell peppers, diced

1 tablespoon minced garlic

3 cups medium shells, dry

1 ½ cups chicken broth
-
1 ½ cups half and half
-
2 cups shredded cheese (we used cheddar and pepper jack)

2 tablespoons Tex-Mex Seasoning
Directions
Heat oil in a deep 12-inch skillet over medium heat. Season chicken with Tex-Mex Seasoning. Add chicken to skillet an sauté until completely browned and cooked through; about 5-7 minutes. Remove chicken from skillet.
To the empty skillet, add the remaining 1 tablespoon oil, onion, and bell pepper. Sauté for 5 minutes. Add the garlic and sauté for 1 minute more.
Stir in pasta, chicken broth, and half and half. Bring to a simmer, cover and cook for about 10 minutes or until pasta is al dente. Stir often to prevent sticking. Do not let mixture come to a rapid boil.
Once pasta is cooked, turn off heat and stir in cheese until compeltely melted. Season with salt if desired.
Add cooked chicken and juices back to the skillet and stir to combine.
Garnish with scallions and cilantro if desired.
