Cheesy Garlicky Potato Casserole

3 pounds russet potatoes, peeled and diced

4 tablespoons butter

4 tablespoons flour

2 cups heavy cream

1 cup whole milk

2 teaspoons salt

3 tablespoons Rustic Garlic Blend

8 ounces gruyere cheese, shredded
Directions
Preheat oven to 350°F. Add prepped potatoes to a saucepan and cover with water. Bring to a boil and cook for 10 minutes; drain. Transfer drained potatoes to a greased 8x11-inch baking dish.
In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook, stirring constantly, until lightly browned, 2-3 minutes. Whisking constantly, slowly pour in the heavy cream and milk until smooth and no lumps remain. Stir in half of the gruyere, salt, and Rustic Garlic Blend. Cook, whisking gently, until cheese is melted.
Pour the sauce over the potatoes in the baking dish. Give a gentle stir to be sure all the potatoes are coated in sauce. Top with remaining gruyere cheese.
Bake for 15 minutes. Turn the broiler on high and broil for 5 minutes more, or until golden brown. Top with fresh herbs such as chives and parsley if desired.
